Main Course at Anne's Oceanfront Hideaway Bed and Breakfast features dishes you could serve for breakfast, brunch or a casual dinner - versatile and tasty this ham quiche is an excellent example of the simple yet mouth watering main dishes you'll find in the cookbook Breakfast with the Broads

Preparation Time: 20 minutes

Cooking Time: 35 minutes

Serves 6-8 people

Ham Quiche

What you need:

·  1 Tablespoon hard margarine

·  ½ Cup fine chopped onions

·  1 Cup fine chopped Ham

·  ¾ Cup Swiss Cheese grated

·  ¾ Cup medium Cheddar Cheese grated

·  1 9 inch unbaked pie shell

·  3 large eggs

·  ½ cup light cream

·  1 teaspoon mustard

·  ½ teaspoon salt

·  ¼ teaspoon pepper

·  1/8 teaspoon ground nutmeg

What you do:

1.  Preheat oven to 375°F.

2.  Melt Margarine in a saucepan and  sauté onions in pan until soft.

3.  Spread ham and cheese into the pie shell.

4.  Add sautéed onions to the pie shell.

5.  In a small bowl mix together eggs, cream, mustard, salt, pepper and nutmeg.

6.  Pour into pie shell.

7.  Bake for 30-35 minutes until crust is golden brown. Center will still be slightly loose. It will firm up more when it cools and the cheese hardens.

8.  Let cool slightly before cutting (5 to 8 minutes) and serve, or you can put in fridge then cut and serve cold.

9.  Garnish with onion tops, ham hearts (sliced ham cut with a heart shaped cookie cutter), corn salsa and toast.
