Rick’s Marvelous Milkless Blueberry Muffins  

Blueberry MuffinOver the years, Rick has perfected his Milkless Blueberry Muffin recipe to be the healthiest, yet most delicious muffin he could serve. Guests of Anne's often sneak a few extra in their bags as they ask for the recipe to take home! These muffins are best eaten right out of the oven, or frozen as soon as they cool for enjoying another day.

 

What you need:    

·  1 2/3 Cup flour 

·  ½ Cup packed brown sugar 

·  ½ tsp. Salt 

·  2 ½ tsp. Baking powder 

 

·  2 large bananas 

·  1/3 Cup apple juice 

·  1/8 Cup vegetable oil 

·  1 teaspoon vanilla extract 

·  1 Cup frozen blueberries 

What you do:

  1. Preheat oven to 400°F.
  2. In a medium bowl, blend dry ingredients thoroughly.
  3. In a separate bowl, mash bananas.
  4. Add other wet ingredients to the mashed bananas and mix.
  5. Add wet mixture to dry and stir gently until moistened.
  6. Grease muffin tins (9 regular size or 18+ mini muffins).
  7. Fill muffin tin cups with batter.
  8. Bake for 18–22 minutes.  Remove from pan and serve.
